Mmmmiso Soup ( sans seaweed )
serves twelve
6 Baby Bok Choi, torn from stem
12 ounces Tofu, 1/2" cubed
12 Baby Bella Mushrooms, sliced
10 Scallions, sliced
1 cup Sweet Miso Paste
*suggestion : South River's Sweet Brown Miso
2 qt. Water
Pinch of Salt
tspn. Fresh Black Pepper
In large pot, bring water with salt to a boil. Once bubbly, reduce heat to a simmer and add bok choi, mushrooms, and scallions and cover for twenty minutes. Remove from heat and add tofu and black pepper for taste. Whisk in miso in small amounts until completely melted. Let sit for a few minutes and go to potluck!

Raw Winter Feast
Ginger Beet Salad
1/2 Red, yellow beet
2 Scallions, chopped
2 Broccoli Raab
2 tsps. Ginger, finely chopped
Handful of Dried Blueberries
Handful of Almonds
Dressing :
2 tsp. Olive Oil
3 tsp. Apple Cider Vinegar
1/2 tsp. Dill, chopped
1 tsp Crushed Mustard Seed
Pinch of Salt + Pepper
Winter Cole Slaw
1 Carrot, peeled
1 Cucumber, peeled
1/2 Red Beet, cubed
1 cup Walnuts, chopped
1/4 Red Onion, half-moon slice
1/2 cup Craisins
Dressing :
2 tblspn. Dijon Mustard
1 tblspn. Mustard Seed
3 tblspn. Veganese / Natural Yogurt
1 tblspn. Apple Cider Vinegar
Many Pinches of Salt + Pepper
* tip : Raw beets are difficult to cut, remove skin first and cut flank, small pieces first.
Toss and Enjoy with friends and a glass of Vouvray!
